Ground : Medium texture with a good skeleton

Winemaking : cryomaceration with skins for 5 hours at 5°C. Soft pressing, fermentation at controlled temperature 15°C.

Aging : in steel at a controlled temperature

Aging in bottle : 2 months

Service temperature : 16-17°C

In Salento , territory rich in culture and in old traditions, “Torre Ospina” winery is born in Racale according to an idea of a young Salento’s contractor who began wine production in 2010 with determination and passion, following personally all the chain, from care of the vineyard to bottling, and thanks to cooperation of winemaking professionals, oenologists and experts, tha chain has reached an excellent quality level, suggesting its red wine Vigne Estate.
Work begins in our farm’s countryside among Negramaro and Primitivo vines , with care of grape’s harvesting handmade, selecting the best bunches. Work finishes with storage in small containers( stainless steel tinaia) with checked tenperature where grape turns into wine. An old process followed by the most advanced technology under the “watchful” expert’s eye.

Torre Ospina farm is characterized by wine’s production, a natural process following grapevine’s time and pandering the character of wine, without invasive interventions.

Rose Wine is a wine made in one night, it goes into the vat only one night. It’s used “short maceration” method (from 12 to 24 hours, not more). From about 1930, wines less harsh began to issue in local consuption.In each winery enology in pink exploits the crushing of grapes whose most is left to macerate with skins for the time necessary to bring in the wine all grape mood, to the delight of sight and taste.
