Excellent with homemade pasta.

It’s good using only organic tomatoes grown in open fields. Tomatoes are picked up by hand in July and in August and handcrafted.
Blanched, passed and potted withouth adding salt. Pasteurization is carried, so that when open this tomato puree gives off the smell
of freshly picked tomato!
Excellente with lasagna, eggplant parmesan.
Try absolutely on pizza, in order to appreciate better red brilliant colour!

THE FARM.

“I Contadini” farm , today led by the third generation of young people, is born in one of the most suited land for vegetables
farming, Puglia, more precisely Salento, the so-called land of “sun, sea, wind”.

Particular climatic conditions of this land, with sun almost all year round, soil composition and influence of the sea,
allow to obtain excellent tomatoes and all vegetables production.

I Contadini Farm grows directly with integrated production, over twenty hectares of open field vegetables, like san marzano tomatoes, eggplant, zucchini, sweet and hot peppers, artichokes and more.

Many vegetables are dried in the sun of “Salento” to remove excess water and to preserve all organoleptic and nutritional qualities.
Then there is the preserve process without adding additives.

Products are preserved in olive oil and reciped in a simple way in order to discover flavors of homemade preserves.

Drying vegetables in the sun is an ancient practice now almost totally resigned, but even if difficult and delicate, it allows to obtain
a great result : pulp softness, preservation of vitamins, proteins and minerals of vegetables, harmonious and recognizable flavor profile.


History and curiosity.

The tomato is native to the Central American region, South America and the southern part of North America, the area included today among the countries of Mexico and Peru. The Aztecs called it xitomatl, while the term tomatl indicated various fruits similar to each other, usually juicy. The tomato sauce was an integral part of Aztec cuisine. It was also stated that the tomato had aphrodisiac properties and is this the reason why the French once called it pomme d’amour, “love apple.” It is said that after its introduction in Europe, Sir Walter Raleigh would donate this map loads of fruit to Queen Elizabeth, naming it as the apples of love ( “love apples”).

The date of his arrival in Europe was 1540, when the Spaniard Hernán Cortés returned to his homeland and brought some specimens; but its cultivation and propagation waited until the second half of the seventeenth century.

All green parts of the plant are toxic, as they contain solanine, a steroidal glicoalcaloide that is not eliminated even by normal cooking processes; For this reason, the stem and leaves are not used for food.

Food uses of tomatoes are so many; the best known is perhaps represented by the past, a ‘ “invention” dating from the eighteenth century Italian who is to store in glass containers cooked tomatoes, crushed and filtered through a sieve. The first industrial plant for storage of tomatoes dates back to 1875: was founded in Turin by Francesco Cirio, industry pioneer.
