My name is Francesco Greco and I am the Executive Chef of Cape Sienna Hotel & Villas, a luxury hotel in Phuket, an island in the south of Thailand.

I’m at the helm of all culinary operations of the hotel, which include a large 300 seatings all day dining restaurant, a 76 seating fine dining restaurant, a tapas bar and a small beach club.


I have a dream team of 43 chefs who help and assist me in creating new menus and dishes, as well as managing human, financial and creative resources of my department.
Culinary arts run in my family, my mother, now retired, was a chef and so her mother, who in the ‘30s was the family chef of the Rotschilds in Paris.

I started early, in 1986 and since then I’ve been working in most of Europe, Americas and finally in Asia, where I live with my Thai wife and three daughters since 2003.
I’m always quite busy and together with my job and my family, I do take care as a Secretary general of Chef Italiani Nel Mondo, a network of kitchen professional with over 5,000 members from all over the world. Here in Phuket, I’m also the Secretary General of the local chapter of Società Dante Alighieri, a non-profit organization founded in 1889 by a group of intellectuals led by Giosuè Carducci with the aim to protect and promote Italian language and culture in the world.


I publish recipes and articles on various platforms, either in Italian or English and cooperate since many years with few vocational hospitality schools in Italy and Universities in Thailand, promoting free exchange among hoteliers all over the world.
In this pages, I’ll publish a series of general interest articles, still hospitality oriented. and various recipes, all of which the offspring of my team’s collective effort. All the recipes are developed and tested with success on one or more of the restaurants I lead.
